Shoestring Bento: Pancake Ornament
One of my favorite memories of my grandfather is of his Blueberry Pancakes. Their warm fluffiness with bursts of  tangy sweet berries, were such a joy to have before he would take us out for a day of swimming at his neighborhood pool (when I had the benefit of visiting him and grandma!)
Sadly my grandfather passed many years ago, but thankfully my uncle had his recipe (it’s actually from the Joy of Cooking with some adjustments made) and shared it with me. Well, I had a craving for it the other night, and decided to use the leftovers for lunch.
Instead of keeping the organic shape of the pancakes, I decided to cut out circles using the Wilton cutter, and create ornaments! I’m finding it challenging, but fun trying to come up with ways to do the shoestring bento challenge during the season of holiday bentos (not going to lie, I miss some of my imprint cutters!). Don’t worry though, I have a preschooler and he’s got some fun lunches coming up without restrictions đ
In this lunch:
Grandpa McNeill’s Blueberry Pancakes
100% Maple Syrup
Green Apples
Organic Romaine Lettuce
Organic Baby Carrots
Tart Dried Cherries
This lunch was served in Easy Lunch Boxes. The round cookie cutter used was the Wilton easy grips cutter. The star cutter is from the Wilton linzer set. I used a knife to cut the top of the ornament and apples.
